Jollof Rice: For 2 cups of rice (approx. 300-350 g), use about 1 tablespoon of the seasoning when cooking. Adjust to taste depending on how spicy or flavourful you like it. Rice + Tomato Sauce Base: Add the seasoning when you sauté onions, tomato paste/puree and blended peppers, before adding rice and water/stock. This helps the spices diffuse evenly. Stews / Soups: Use about ½ to 1 teaspoon per 500 ml of liquid, depending on how intense you want the flavour. Marinades / Rubs for Meat or Fish: Combine the seasoning with oil (e.g. vegetable oil), chopped onions, garlic, and optionally some citrus (lime or lemon). Rub onto protein and let it sit for at least 30 minutes before grilling, baking or frying. Vegetables / Roasted Veg: Sprinkle over vegetables before roasting for a West African flavour twist. Using oil helps the seasoning stick.
