Method: Picked prior to the general harvest and then ground in a modern cutting mill under a cooling and vacuum process. Using olives that are not fully mature produces a smaller yield of oil but with an intensified flavour and aroma.

Character:
Notes of freshly mown grass at the front of the palate, followed by hints of almond and banana with a mild peppery finish.

Varietal: Arbequina olives are originally from arbeca in Spain from which the name is derived. They have since become a popular olive in olive oil production in Catalonia due to the quality and yield of the oil it produces.
