Spain is less known for its liquors than for its wines, and Andalusia is best known for sherry, but this is a traditional spirit also made in the Sherry Triangle, between Jerez and the south coast, and like sherry, it is less beloved than it deserves to be. A fragrant brandy with a long history and a distinctive flavour profile, it is rich with orange peel and toasted almonds and makes an excellent accompaniment to chocolate or cheese, but is also good on its own as an after-dinner digestivo.
